Champagne Paul Louis Martin has chosen to highlight its finest terroir parcels with five cuvées parcellaires. Produced in small batches, these bottles are not measured out to reveal their complexity and aromatic richness. A family business, these cuvées are also dedicated to past, present and future generations: they bear the names of Victorine, Martin and Line, the children of Vincent, the House cellar master.
Brut Nature, Zero dosage
All grapes are from the plot Les Coutures classified Premier Cru in Dizy.
The sensory expression seems obvious and supported by purely expressive reverberation of the grape variety and its place of life. The olfactory salience sculpts the green citrus in contrast to the fine red fruitiness, a freshly picked raspberry berry, a gooseberry with pearly skin. The terroir asserts itself and unfolds.
The palate demonstrates the relief of rectilinear flavors with zesty green, red, colorful floral precision with an ideal finish, a transverse line demonstrative of great fresh, innate and essential bitterness.
Filets of marinated mackerel, Espelette pepper and lime.
